This recipe combines two of my favourite comfort foods: peanut butter and pasta. In the past, I never would have thought of putting these two ingredients together. But once I tried it, I was hooked and now this recipe is a staple of mine. The combination of ingredients is mouthwateringly savoury and satisfying, and incredibly moreish!
This is a versatile recipe because you can add almost any vegetable as an optional extra. This means it is a great way to use up any spare veggies you have in your fridge. On the other hand, if you want a quick and easy meal, you can make a more basic version using only ready-cooked ingredients and it makes ideal comfort food that will only take around 15 minutes to prepare.
I haven’t put quantities into the ingredients because I literally just add a splash or a scoop of each thing! The only thing you really need to measure out is the amount of pasta to cook, which depends on how many people you are cooking for. For all the other ingredients, the proportions can be approximate. Every time I make this dish it is slightly different, but it always turns out yummy!
If you do not own all of the ingredients, it’s fine to skip some of them out or substitute them with similar ingredients. The only essentials are pasta and peanut butter.
This recipe is vegan, and it can be made gluten-free if you use gluten-free pasta and soy sauce. Always check the packaging of your ingredients! Obviously, this recipe is not suitable for peanut allergy sufferers.

- Soy sauce
- Sesame oil
- Nutritional yeast
- Salt (I use Himalayan pink salt)
- Onion or onion powder
- Garlic or garlic powder
Optional extras
- Broccoli
- Broad beans
- Sweetcorn
- Peas
- Chickpeas
- Courgettes
- Any other vegetable!
Method
- If you are using fresh onion and garlic, chop them and fry them in a pan.
- If you are using any other fresh vegetables, chop them and either steam, boil or fry them.
- Cook the pasta according to the instructions on the packet.
- Drain the pasta.
- Stir in a generous scoop of peanut butter, a splash of soy sauce and sesame oil and a sprinkling of nutritional yeast, salt, and onion and garlic powder (if you are using them).
- Add in the fresh onion, garlic and other vegetables when they are cooked.
- Mix everything together.
- Serve and enjoy!
As you can see, this recipe is very quick to make if you opt for the basic version with onion and garlic powders and no added vegetables. All you have to do is cook the pasta and then stir in the other ingredients. This is a great option when you need to make a quick and easy meal!
