Creamy and Savoury Avocado and Brown Rice with Lime

Avocado is such a versatile food. It can be eaten alone, added to salads, mashed onto toast or blended to make guacamole. One of my favourite ways to eat avocado is to mix it with rice, and that is the basis for this simple, yet delicious, recipe.

By mixing avocado and brown rice, and adding a few flavoursome ingredients to season it, this meal is seriously satisfying. I love the contrasting textures of the chewy rice with the smooth avocado. Limes add a citrus hit, and sesame oil and soy sauce add savoury umami flavour. This is one of my favourite meals to make!

Because this dish is so moreish, I tend to make a generous portion. 1 cup of rice is quite a lot, but you can always use less if you have a small appetite. You can also increase or decrease the amount of lime to suit your tastes.

When I first made this recipe, I used finger limes. These are small limes that are full of juicy ‘pearls’ that burst in your mouth. They can be expensive and hard to get hold of, so ordinary lime works well too, or you can even use lemon.

I haven’t written down specific amounts of sesame oil, sesame seeds or soy sauce because you can add them to suit your taste. You can also add more soy sauce while you are eating if you feel it needs an extra kick.

I love the texture of brown rice, but this recipe will also work using white rice. If you opt for this, you will only need to simmer the rice for 15 minutes instead of 20.

This recipe makes 1 generous portion (or a side dish for 2) but you can obviously multiply the amounts if you are cooking for more people.

This recipe is suitable for vegans and can be made gluten-free if you choose gluten-free soy sauce.

Ingredients

Serves 1

  • 1 cup (uncooked) brown rice (check if it’s too much when I try)
  • 1 ripe avocado
  • 2 finger limes (or 2 slices of ordinary lime)
  • Sesame oil
  • Sesame seeds
  • Soy sauce
  • Salt (optional)

Method

  1. Put 1 cup of brown rice and 1.5 cups of water in a pan.
  2. Bring to the boil, then cover and turn down the heat to a simmer. Set a timer for 20 minutes.
  3. After 20 minutes, turn off the heat and remove the pan from the hob, but leave the rice covered. Set a timer for 10 minutes.
  4. During this 10 minutes, cut the avocado in half and scoop out the flesh. Roughly chop and mash it up.
  5. When the 10 minute timer goes off, the rice will be ready. Transfer it into a bowl or plate.
  6. Add the avocado to the rice and mix it up.
  7. Cut the finger limes in half and squeeze or scoop out the pulp into your rice and avocado mix.
  8. Add a splash of sesame oil, a sprinkling of sesame seeds, a splash of soy sauce and a pinch of salt (optional).
  9. Mix everything together.
  10. Eat and enjoy!

This meal will turn out warm rather than hot because you will be mixing hot ingredients with cold. Don’t be put off by this – it works well at a warm temperature and makes a great summer meal.
